Cape Grace Basket Pressed Cabernet Sauvignon is sourced from the estate vineyard at Wilyabrup in Margaret River, planted in 1996.
The Cabernet is dry grown. Without irrigation, the vines' roots are forced deep into the soils in search of water, picking up trace elements of minerals which contribute a sense of place to the wine.
The fruit is handpicked in the cool of the morning, then open fermented. Early on, the cap of grape skins is hand plunged up to four times daily to extract colour and tannins. There is up to one month of maceration on skins.
The free run juice is drained, and the skins are basket pressed to tank. Malolactic fermentation softens the wine's acidity before it is racked to half new French oak barrels to age for 16 months.
Deep ruby, Cape Grace Basket Pressed Cabernet Sauvignon is laden with dark fruit flavours, oak and fine tannins. Berry acidity provides length and balance. Cellaring potential is 10 years.
